Ingredients

  • 2 boneless, skinless chicken breasts, sliced into thin strips
  • 2 fillets of white fish (such as tilapia or cod), cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce (low sodium)
  • 1 tablespoon oyster sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooked brown rice or quinoa, for serving

Instructions

  1. 1.Heat the olive oil in a large skillet or wok over medium-high heat.
  2. 2.Add the chicken strips and season with salt and pepper. Cook for about 5-7 minutes until browned and cooked through.
  3. 3.Remove the chicken from the skillet and set it aside.
  4. 4.In the same skillet, add the garlic, ginger, and sliced vegetables (red bell pepper, broccoli, and snap peas). Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  5. 5.Add the fish pieces to the skillet and cook for another 3-4 minutes until fully cooked and flaky.
  6. 6.Return the cooked chicken to the skillet.
  7. 7.In a small bowl, whisk together the soy sauce, oyster sauce, honey, and sesame oil. Pour this sauce over the chicken and fish mixture, stirring to combine.
  8. 8.Cook for an additional 2-3 minutes to heat everything through, ensuring the sauce coats all the ingredients.
