Ingredients
- •2 boneless, skinless chicken breasts, sliced into thin strips
- •2 fillets of white fish (such as tilapia or cod), cut into bite-sized pieces
- •2 tablespoons olive oil
- •1 red bell pepper, sliced
- •1 cup broccoli florets
- •1 cup snap peas
- •2 cloves garlic, minced
- •1 tablespoon ginger, minced
- •3 tablespoons soy sauce (low sodium)
- •1 tablespoon oyster sauce
- •1 tablespoon honey
- •1 teaspoon sesame oil
- •Salt and pepper to taste
- •Cooked brown rice or quinoa, for serving
Instructions
- 1.Heat the olive oil in a large skillet or wok over medium-high heat.
- 2.Add the chicken strips and season with salt and pepper. Cook for about 5-7 minutes until browned and cooked through.
- 3.Remove the chicken from the skillet and set it aside.
- 4.In the same skillet, add the garlic, ginger, and sliced vegetables (red bell pepper, broccoli, and snap peas). Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
- 5.Add the fish pieces to the skillet and cook for another 3-4 minutes until fully cooked and flaky.
- 6.Return the cooked chicken to the skillet.
- 7.In a small bowl, whisk together the soy sauce, oyster sauce, honey, and sesame oil. Pour this sauce over the chicken and fish mixture, stirring to combine.
- 8.Cook for an additional 2-3 minutes to heat everything through, ensuring the sauce coats all the ingredients.
- 9.Serve the stir-fry over cooked brown rice or quinoa, garnished with sesame seeds or chopped green onions if desired.
