Mediterranean Quinoa Salad

Ingredients

  • 1/4 cup quinoa, rinsed
  • 1/2 cup water
  • 1/4 cup cucumber, diced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup chickpeas, drained and rinsed
  • 1 tablespoon red onion, finely chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. 1.In a small pot, combine quinoa and water. Bring to a boil over medium-high heat.
  2. 2.Once boiling, reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy and water is absorbed.
  3. 3.Remove from heat and let it cool slightly.
  4. 4.In a large bowl, combine the cucumber, cherry tomatoes, chickpeas, red onion, and parsley.
  5. 5.Add the cooked quinoa to the bowl with vegetables.
  6. 6.In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. 7.Pour the dressing over the quinoa salad and toss gently to combine.
  8. 8.Taste and adjust seasoning if necessary.
  9. 9.Serve immediately or chill in the refrigerator for up to an hour before serving.
