Ingredients
- •1/4 cup quinoa, rinsed
- •1/2 cup water
- •1/4 cup cucumber, diced
- •1/4 cup cherry tomatoes, halved
- •1/4 cup chickpeas, drained and rinsed
- •1 tablespoon red onion, finely chopped
- •1 tablespoon fresh parsley, chopped
- •1 tablespoon olive oil
- •1 tablespoon lemon juice
- •Salt and pepper to taste
Instructions
- 1.In a small pot, combine quinoa and water. Bring to a boil over medium-high heat.
- 2.Once boiling, reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy and water is absorbed.
- 3.Remove from heat and let it cool slightly.
- 4.In a large bowl, combine the cucumber, cherry tomatoes, chickpeas, red onion, and parsley.
- 5.Add the cooked quinoa to the bowl with vegetables.
- 6.In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- 7.Pour the dressing over the quinoa salad and toss gently to combine.
- 8.Taste and adjust seasoning if necessary.
- 9.Serve immediately or chill in the refrigerator for up to an hour before serving.
