Ingredients
- •2 boneless, skinless chicken breasts (about 6 oz each)

- •2 tablespoons lemon juice
- •2 cloves garlic, minced

- •1 cup quinoa
- •2 cups vegetable or chicken broth
- •1 bunch asparagus, trimmed

Instructions
- 1.In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
- 2.Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Let it marinate for about 10 minutes while you prepare the quinoa and asparagus.
- 3.Rinse the quinoa under cold water and then combine it with the broth in a medium pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and liquid is absorbed. Fluff with a fork.
- 4.While the quinoa is cooking, heat a grill pan or outdoor grill over medium-high heat. Grill the marinated chicken for about 5-7 minutes per side or until cooked through and internal temperature reaches 165°F (75°C).
- 5.In a separate pan, add a splash of olive oil and sauté the asparagus over medium heat for about 5 minutes or until tender. Drizzle with balsamic vinegar and toss to coat.
