Ingredients
- •1/2 cup quinoa
- •1 cup water
- •1 boneless, skinless chicken breast (approximately 6 oz)
- •1 tablespoon olive oil
- •Salt and pepper to taste
- •1/2 avocado, diced
- •1/2 cup cherry tomatoes, halved
- •1/4 cucumber, diced
- •2 tablespoons fresh parsley, chopped
- •Juice of 1/2 lemon
Instructions
- 1.Rinse the quinoa under cold water in a fine mesh strainer.
- 2.In a small saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes until all the water is absorbed.
- 3.While the quinoa cooks, heat a grill pan over medium-high heat. Season the chicken breast with olive oil, salt, and pepper.
- 4.Cook the chicken on the grill pan for about 5-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F/75°C). Remove from heat and let it rest for a few minutes before slicing.

- 6.In a mixing bowl, combine the cooked quinoa, diced avocado, cherry tomatoes, cucumber, and parsley.
