Ingredients

  • 1/2 cup quinoa
  • 1 cup water
  • 1 boneless, skinless chicken breast (approximately 6 oz)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cucumber, diced
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1/2 lemon

Instructions

  1. 1.Rinse the quinoa under cold water in a fine mesh strainer.
  2. 2.In a small saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes until all the water is absorbed.
  3. 3.While the quinoa cooks, heat a grill pan over medium-high heat. Season the chicken breast with olive oil, salt, and pepper.
  4. 4.Cook the chicken on the grill pan for about 5-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F/75°C). Remove from heat and let it rest for a few minutes before slicing.
  5. 5.Once the quinoa is done, fluff it with a fork and let it cool slightly.
  6. 6.In a mixing bowl, combine the cooked quinoa, diced avocado, cherry tomatoes, cucumber, and parsley.
  7. 7.Add the sliced chicken on top of the salad and drizzle with lemon juice. Toss gently to combine all ingredients.
