Ingredients

  • 200g grilled chicken breast
  • 1 cup quinoa
  • 1 cup broccoli florets
  • 1 medium avocado
  • 1/2 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

Rinse the quinoa under cold water, then cook it according to package instructions (usually 2 cups of water for 1 cup of quinoa).
While the quinoa cooks, grill the chicken breast until fully cooked (about 6-8 minutes on each side). Season with salt and pepper.
In a separate pot, steam the broccoli florets until tender (about 5-7 minutes).
Once the quinoa is cooked, fluff with a fork and let it cool slightly.
In a bowl, mix the quinoa, grilled chicken (sliced), broccoli, halved cherry tomatoes, and diced avocado.
Whisk together olive oil, lemon juice, salt, and pepper, then drizzle over the bowl.
Toss everything gently and serve.

Ingredients

  • 200g flank steak
  • 1 cup brown rice
  • 1 bell pepper (sliced)
  • 1 cup snap peas
  • 1 carrot (sliced)
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger (minced)
  • 2 cloves garlic (minced)

Instructions

Cook the brown rice according to package instructions.
Slice the flank steak thinly against the grain and season with salt and pepper.
In a large pan or wok, heat sesame oil over medium-high heat. Add the minced garlic and ginger and sauté for 1 minute.
